Chi-CA-go, My Kind of Town!

 

It would be awfully nice if history didn't repeat itself while we were in town.

 

Forked! is heading on the road this weekend. Starting tonight, I’ll be headed to beautiful, windy, and probably still unseasonably cold Chicago for a three-day trip that should include miles of walking their wondrously flat streets, admiring many items that I can’t afford in stores that I should not go into (ie, record stores), and generally going every which way that offers the most interest for the least dollars.

Me and my partner are doing this on a shoestring, so this trip is strictly no-frills. We’re limiting ourselves to eating out once a day, so we’re bringing dry goods and any groceries that will last a seven hour car trip. I also saw that our hostel offers a free pasta dinner on Saturday for visiting guests, so as long as the sauce is not cheese or meat based, we’re going to get our grub on for free. Otherwise, I’m envisioning a weekend of peanut butter sandwiches, granola bars, and whatever else is tasty and road-worthy.

Of course, there’s a limit to my thriftiness. I will be dining out in Chicago. Cheaply, yes, but dining out nonetheless. A trip to the Chicago Diner is already planned, so I ask you, my fellow eaters: If you’re from Chicago or have been there, what are some great places to try out?

I will try to post a bit on my travels this weekend. I look forward to sharing the experience with all of you. I promise that it won’t just be pictures of us eating out of a dumpster behind Whole Foods or stealing ketchup and mustard packets from hot dog stands. Although that isn’t a terribly bad idea….

Good Morning, Peanut Butter Cookies!

It’s a busy morning in a busy season. Who doesn’t need a cookie?

The peanut butter cookie is a wonderful double agent of the cookie world. One one side of craving, you have the need for saltiness, for crunch, for savory. On the other side, you have a craving for sweetness, sugar, morsels melting on the tip of your tongue. The peanut butter cookie plays both sides. It’s the perfect combination of cravings, all delivered in one handheld little edible package.

The above pictured – and I’m just now realizing that the picture is blurry – is a batch of peanut butter cookies made from the recipe in Alicia Simpson’s terrific Quick and Easy Vegan Comfort Food. In my experience, nearly every peanut butter cookie recipe has a secret ingredient. Alicia’s is unsweetened applesauce, and it works really well for the texture.

My minor complaint is that these cookies aren’t super peanut buttery, but it could also be the unsweetened organic peanut butter that I used in the recipe. Although it’s not high cuisine by any means, the standard Jiff or Skippy work better in peanut butter cookies, at least if you want a good heavy dose of peanutty flavor. Alicia’s are pretty healthy, all things considered (yes, even with the refined sugar).  

The other problem with this cookie is strictly my own fault: NO. GRID. Why grid your peanut butter cookies? Several theories abound, most of them false. (No, grid-ing your PB cookie isn’t going to make it any better tasting, nor does it keep the cookie from spreading or being as greasy or whatever.) The only genuinely plausible reason I can come up with is that by now, the grid on the cookie universally means “This is a peanut butter cookie” thereby forewarning any possible snackers with nut allergies.

Still, it just doesn’t feel right when the cookies aren’t properly grid-ed. What do you all think?

Anatomy of a Sandwich

Being lazy can actually be a terrific gateway to quick, delicious recipes. While I’d love to make stews and casseroles and pastas and pastries for every day of the week, many nights the thought of putting any more than ten minutes into a meal is oppressive. Not that I’m necessarily advocating 30-minute, Rachel Ray – type cooking. So much of those ingredients are processed foodstuffs, not fit for man nor beast (well, maybe beast), or at least, not the kind of thing you want to habitually reach for when you need a quick dinner.
 
Hence, the sandwich. The wonderful, multi-faceted sandwich. Perfect for carnivores, omnivores, and herbivores alike. Sandwiches are fantastic ways to get rid of remnants of produce, use that last slice of cheese, or try a flavor combination not yet sampled. Add heat, add condiments, add herbs, or see how much taste mileage you get out of only two or three ingredients. Be it sweet or savory, appetite-teasing or hugely satisfying, there is very little a sandwich can’t do.
